Let’s face it, winter can put you in the doldrums if you are not on a ski slope or escaping to a tropical island. The days are not getting long quickly enough and the temperatures are seemingly getting colder and colder with rain projected at least 80% of the time.
So to give you a little mid-winter and mid-week pick me up, we have a quick yummy pairing that will please even your kids with a wine that will make the parents even happier.
Elephant Hill Merlot, Malbec, Cabernet Franc 2013
This wine is a surprise from the very first sip. The extreme lushness of the black fruit pervades the nose into the rich, ripe flavours. You are instantly greeted by the very exuberant fruit that brightens your day but then leads into a molten chocolate swirl with some spice and tannin from the Cab Franc and Malbec.
This wine shows off three varieties that are often in competition with each other but in this instance, it is pure harmony with suppleness, an easy camaraderie and banter with a vibrancy that attracts you more and more.
Pair it with these Mozzarella Stuffed Chicken Parmesan Meatballs by Spoon Fork Bacon. These are delish and super easy to make!
I opted for the baked version – used lamb instead of chicken, colby instead of mozzarella and everyone in our house was quite happy, even the picky toddler!
